Healthy eggplant ricotta bites.

These eggplant ricotta bites are a simple yet delicious appetizer that are sure to be a hit at your next party! This recipe is to prepare six servings, to you may need to adjust based off of how many people you plan to have over. The best part? Each serving is only 243 calories.

  • 1 medium eggplant
  • Kosher salt
  • All-purpose flour, for dredging
  • 2 large eggs
  • 3/4 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon plus 2 teaspoons extra- virgin olive oil, plus more as needed
  • 2 large plum tomatoes, diced
  • 2 teaspoons red wine vinegar
  • 1 cup ricotta cheese
  • Shredded fresh basil, for topping

If you want to cut down on the amount of fat in the recipe, look for low-fat cheese and instead of using extra-virgin olive oil, you can substitute it for coconut oil. If you want to add more vegetables to this dish, roasted red peppers work well.

    I am 81 like simple recipes. I don’t eat out. I don’t eat fried, acidic food. Have a throat and stomach problem and use food processor after or before eating. I use organic foods and also pot grow my own herbs, tomatoes, peppers.

    Read “Grain Brain” by Permutter

    Throw away the cholesterol and blood pressure meds and you will feel better.
    Cut out Gluten, bread, cut the carbs down to diabetic portions or less, eat butter, meat, eggs, and good fats. Try avocados. Get some exercise. I have done all of the above. The second week of December 2014 I weighed 195-196lbs this morning, I weighed 197.8lbs. Also check out John Bergman youtube “the truth about blood pressure and cholesterol. my 2cents

    I have never eaten eggplant but since you said it was good for me, I am willing to give it a try since my husband is a diabetic 11with high blood pressure too.
